Hamburg Airport launches international tendering process for four food & beverage locations

Modern concepts for food & beverage diversity at the airport / four locations in two tendering packets


Hamburg Airport has launched an international public tendering process for four food & beverage locations in two lots. Three of the locations are within the security-controlled area and one in the publicly accessible area. The airport places great value on a diverse food & beverage offering. A wide range of different concepts are therefore sought, ranging from burgers to bowls and from bistro to restaurant. Submissions of suitability application may be submitted via the TED tendering platform until 5 June 2023. The contract is due to begin on 1 April 2024.

“We are looking forward to fresh concepts to make the food & beverage range at the airport even more diverse. It is very important to us that every passenger is guaranteed to find something to their taste, whether they are looking for a take-away snack before departure or a relaxed, sit-down meal,” says Lutz Deubel, Head of Center Management at Hamburg Airport.

Burgers, bowls and the rest: a variety of meals for any time of day

Hamburg Airport is opening two lots with a total of four food & beverage locations to tender. The first lot is for a site on level 2 of the Airport Plaza (security-controlled area), approximately 100 m², currently home to a burger restaurant. Burgers should still be on offer in the future: “Ideally, we want a well-known operator with a diverse range of products for everyone, from classic burgers to vegan alternatives. A varying range, adapted to the time of day, would also be of interest, so that our passengers could also get their breakfast there in the mornings,” says Lutz Deubel.

The second lot is for the following three sites:

  • Approx. 320 m² in Terminal 1, Level 3 (publicly accessible area)
  • Approx. 100 m² in the Airport Plaza, Level 2 (security-controlled area)
  • Approx. 230 m² on the Passenger Pier adjacent to Gate A17 (security-controlled area)

There are no fixed requirements for the first site on Level 3 of Terminal 1. Here, the operator has the opportunity to convince the airport of their idea. For the second site, in the Airport Plaza, however, there are very well-defined expecations: A healthy Asian food concept is being sought, serving dishes such as bowls and curries but not sushi. For the pier site, a three-part concept is expected to cater for every expectation: The popular bistro concept should remain. Passengers can order for take-away or eat-in directly at the counter. Passengers with more time can enjoy an à la carte table service. This range is currently not available at the airport.

Hamburg Airport – a popular dining location

Hamburg Airport is northern Germany’s largest airport and the fifth-largest nationwide. With 11.1 million passengers in 2022, passenger numbers have recovered more quickly than expected after the pandemic. In comparison: there were more than 17 million passengers in the pre-coronavirus year of 2019. For restaurateurs, retailers and service providers, this means exposure to an international clientele, 365 days a year. The 15 restaurants and cafés presently operating at the airport offer passengers and visitors alike a varied range of food, from sushi, noodles and bread rolls all the way to buffet service.
